We pick white truffles in the areas of Herculane and the Danube Delta, October to January.
The white truffle has a globular shape, with numerous depressions that make it irregular. The outer surface is smooth and velvety. The color varies from pale cream to dark cream to slightly greenish. Its flesh or gleba is clear, white and grayish yellow with white veins.
The pleasant and fragrant aroma, very different from that of garlic of other truffles, makes this truffle one of a kind in its species. It lives in symbiosis with oak trees, lime trees, poplars, and willows, and is rarely found in combinations with other truffles.
In the case of the white truffle, for best growing and developing conditions, the soil must be soft and moist most of the year, it must be rich in calcium and a good circulation of air must be maintained. It is, therefore, obvious that not all soils have these characteristics and the environmental factors make the white truffle a rare fruit.
The area of Herculane, known ever since the time of the Roman Empire for its thermal springs, wet climate and karst relief located at the same altitude as Alba in Italy (known for its truffles).
The Danube Delta – an oasis of wilderness, the largest delta in Europe, is a large nature reserve, where any human intervention is prohibited, a wetland area favorable for the growth of white truffles, the reserve includes the oldest oak trees – around 300 years old.
